Intermediate Farmstead Cheese Making: Bloomy Rind Cheese

Second class of a three part series. Discover the process of Farmstead, hand-crafted cheese making: Pasture to Cheese Plate, the life cycle of farmstead cheese.

This intermediate class includes information on the differences of goats milk and cows milk cheeses, various cultures used in mold ripened (bloomy rind) and hard aged cheeses. Learn about the attributes of aging rooms and and affinage* techniques (*caring for aged cheeses). Practice hands-on cheese making of a mold ripened cheese. Resource lists available for making your own cheese. Take home a selection of White Lotus Farms aged cheeses to enjoy.

Cheesemaking classes are for ages 16 and up. Classes are 2 hours, Saturdays, 12-2pm and include creamery products to take home.

Students should wear clean clothing and clean shoes. Creamery apparel (lab coats, hairnets, shoe covers and gloves) will be provided.
